recipes #recipe: Monster Inc Cookies 25th February 201426th August 2017 I got a little creative with the children at the weekend, we baked some fun Monsters Inc style cookies and decorated them with icing to get that really authentic effect. We had a shape cutter for Mike, so what better cookies to cut than Mike Wazowski. Ingredients 200g unsalted butter at room temperature 200g caster sugar 1 egg, beaten 1/2 tsp vanilla extract 400g plain flour For the decoration: icing sugar for dusting 500g green icing chocolate icing pen – to draw the face Directions Beat butter and sugar with KitchenAid, until pale and fluffy. Gradually add the beaten egg a little at a time. Mix in the vanilla extract. Using a palette knife, mix in the flour. Then use your hands to bring the dough together to form a ball. Wrap in cling film and chill for at least an hour. Dust a work surface, then roll out the dough to about 5mm thick. Use your Mike cookie cutter to cut out the shapes in the dough. Keep going until all of the dough has been used. Use the embosser marker, if you have one, to get the lines in Mike’s face accurate. Bake the cookies at 180degrees/gas 4 for 8-12 minutes. Transfer to a wire rack to cool completely before icing them. Let the children run wild with the icing and finish off with a mouth and eyes.
