We absolutely love American-style SKIPPY® Peanut Butter and jumped at the chance to try them in a new recipe for Pancake Day. We love trying new things and this recipe is vegan, we have extended Veganuary as we are enjoying using less dairy. This recipe uses no eggs and dairy free milk. This is my vegan peanut butter and banana pancake recipe.

SKIPPY Peanut Butter

Ingredients

🥜 60g of Extra Crunchy American-style SKIPPY® Peanut Butter⁣
🥜 500ml oat milk⁣
🥜 2 bananas peeled and mashed ⁣
🥜 300g self raising flour⁣
🥜 50g caster sugar ⁣
🥜 1tbsp baking powder⁣

Method

I mixed the banana and peanut butter together in our electric mixer, then added milk, then the dry ingredients. It whisks up to a smooth batter. That smells delicious. ⁣

Simply heat the pan with olive oil and fry the pancakes, you will notice little bubbles on the top of the pancakes which means it’s time to flip!⁣

We served these with a yummy vegan chocolate and American-style SKIPPY® Peanut Butter sauce, I melted both in a pot and stirred. I used half and half but you can add more peanut butter if you want!⁣

How do you like your pancakes for Shrove Tuesday? This is our vegan recipe as we are trying to eat less dairy between us all. This is a great recipe for all the family and you can decorate them for whatever the theme of the day, not just pancake day!
