I love a challenge and Very gave me a fantastic opportunity to find some quick and easy recipes using my Air Fryer. Energy efficient cooking is really important at the moment, with the cost of living crisis, and so working smarter in the kitchen really helps with this. Not only are the below recipes quick and easy, they are healthy and reduce waste which is a win-win. My vegetarian Air Fryer recipes are also perfect for lunchtimes: vegetable soup and a cheats pizza.

Cheats Pizza

I love this Cheat’s pizza as it’s such a quick thing to make and really does taste scrumptious. So we use whatever we have lying around for the base; we have tried naan breads, pitta breads, flatbreads and they all come out the same – crispy and delicious. Air Fry at 180°c for 4 minutes and voila – perfect cheats pizza. The kids love them too.

We use either a pitta bread, flatbread or naan bread. Add on the passatta and cheese (grated cheddar and mozzarella mix is best) and that is it. A perfect pizza for lunch or snack.

Easy vegetable soup

This is another great lunchtime recipe as it is quick and easy. We used the vege we had in the house: a carrot, pepper, 2 tomatoes, celery and an onion. Chop it all up and add it to the air fryer with the garlic. Cook on 180°c for 25 minutes. Once cooked, it will smell gorgeous, add all the vege to your blender or Nutri Bullet if you have one and blitz to the consistency that you like. We like ours with a bit of texture.

It’s a great idea for using up vegetables. I like it because we can set the vegetables to cook and carry on working or doing things for 25 minutes. It’s an easy recipe and the air fryer keeps the vegetables tasting so delicious. Not sure what it is but food cooked in the air fryer tastes so much better.

What is our Air Fryer?

We have the Ninja Foodi MAX Dual Zone 9.5L Air Fryer. I love it, I think it is really clever and gives me a lot more control over mealtimes. There are 2 drawers, which is useful for cooking larger meals for the family and you can sync or match cooking for each drawer. So, for example, if I want to cook meat free sausages in the left drawer, which will cook at 180°c for around 10 minutes and in the right hand drawer I might have homemade chips, that will be 190°c for 25 minutes – I can set the Air Fryer to sync and it will make sure they cook at their right temperatures for their right times, but finish at the same time. It’s so clever. The match function simply allows things to cook or the same temperature and time. Very have got a great range of appliances on their website, including this Ninja.
