As some of you know I stopped eating meat a couple of years ago now, it was more of a thing I had to do instead of choosing to do. I thought it would be hard to think of meals to replace meat but it really wasn’t. There are so many things to cook and so much colour too. Over the years we have come across some delicious recipes and here are a few of my favourite vegetarian meals. 

Halloumi burgers

Hubby usually puts an aubergine twist on this and we have slices of grilled aubergine with our halloumi. These halloumi burgers are delicious. You can easily add your own spin on the stack too: asparagus stalks are a great addition and the flavours really compliment each other. We have our burgers with a salad side and butter spinach. Yummy! 

Mushroom Tikka Masala

Mushroom is my favourite vegetarian option. I prefer this to a vegetable curry. This curry is delicious, its got a good tang and it’s really coconutty! (Not sure if that’s a word). We use the Tikka Masala paste recipe from Jamie Oliver and we just don’t add the chicken. Mushrooms are a great substitute, we use different kinds and add them to the mix. The fresh coriander in this recipe is just amazing! 

Nut roast

I love a nut roast, this is my go to for a roast dinner. Or Hubby’s famous puff pastry dish. The nut roast is a great way of using up left over vegetables from the previous day, just make sure you have plenty of time to de-shell the pistachios! That takes up quite some time. It’s a great recipe.

Vegetarian lasagne

It took us a few months to realise that substituting the mince for vegetables was much tastier. Don’t get me wrong we love the Soya Mince but it’s much better for you to use vegetables. We are trying to minimise the amount of soya we eat as someone told me it can soak up all the iron you take in (I will investigate this). I love this vege-lasagne recipe, ricotta and spinach is just delicious and roasted pine nuts have to be my favourite at the moment. The great thing with this recipe is that you can use whatever vegetables you have to hand really – but being mushroom and aubergine we always have them in the fridge at our house.
