With it being pancake day two weeks today, it has got me thinking about what we can do with our batter mixes: breakfast, lunch, dinner and dessert! When I was growing up, dinner was just pancakes and I really want to set off a tradition like that with our children over the coming years. But I am sure we can get a little more creative with our pancakes.
