This is a fantastic recipe for a big breakfast to keep you going on a busy Day over Easter. It is really simple to make and it is really filling, so fuel yourself up for a fun day ahead. The recipe is an easy omelette recipe with spinach and feta cheese - it could even be a nice quick and tasty lunch too. We are really enjoying cooking with the Tesco Organic coconut oil instead of olive oil at the moment, I know it is a little more expensive but the pots do last for a long time and it is so much healthier for you. With it being pancake day two weeks today, it has got me thinking about what we can do with our batter mixes: breakfast, lunch, dinner and dessert! When I was growing up, dinner was just pancakes and I really want to set off a tradition like that with our children over the coming years.
