If you want to do some Easter baking this weekend, or over the week, this is your recipe! The yummiest, moist carrot cake with a zangy cream cheese frosting, complete with carrot decorations. These are quite a bit of effort, but I think it is well worth it as they look and taste amazing. There is quite a shopping list, but I ordered all of the bits on Tesco groceries online and a neat trick is I used white chocolate chips with food colouring to complete the decoration with the orange and green which I thought was really effective. Did you know you can make a carrot cake in an Instant Pot? Fascinating!
