If you want to do some Easter baking this weekend, or over the week, this is your recipe! The yummiest, moist carrot cake with a zangy cream cheese frosting, complete with carrot decorations. These are quite a bit of effort, but I think it is well worth it as they look and taste amazing. There is quite a shopping list, but I ordered all of the bits on Tesco groceries online and a neat trick is I used white chocolate chips with food colouring to complete the decoration with the orange and green which I thought was really effective. Did you know you can make a carrot cake in an Instant Pot? This is a perfect recipe for large chocolate chunk and chewy cookies. They are great for over Easter and for wrapping up in tissue paper and giving to family too. I used a large bar of chocolate and some great Tesco baking products, they do large tubs of baking powder and bicarbonate of soda which is great as we go through a lot of them. These are just two items that you need to keep in your baking cupboard for when you get the urge to bake.  VIEW the POST

This is a really tasty meal that you can make really quickly over the Easter holidays, we love it with basmati rice and natural yoghurt. You could have it with salad and new potatoes, or put it in a warm tiger bread roll with a dollop of natural yoghurt on top. It is really tasty. We used Tesco lean turkey mince to make our Cajun dish, we had never cooked with turkey mince before. It tastes a lot better and is not as greasy, I really enjoyed the dish. I prefer using turkey mince now, instead of beef.

Pom-Bear have launched their tasty range of !Pigs in Blankets", Snowmen shaped snacks this winter and they are absolutely gorgeous and just as Toddler Friendly as the bear shapes. You can really taste the sausage and bacon, Noah loves them and so does Daddy. I even took them into work and they were loved their too,I didnt tell people the flavour to begin with and they could guess it was bacon and sausage - which I thought was really good. They are Gluten free, they have no artificial colours and no artificial preservatives which means they are as healthy to eat as any other Pom-Bear snacks and one of the favourite lunch time snacks in the Constant Household.
