I do love a challenge. Wayfair tasked me to transform a part of my home with an "into the woods" theme, ready for Christmas. It's amazing how a small amount of items can completely transform a space. I decided to focus on the hallway and dining area as we will be hosting for a lot of guests this Christmas. Somewhere to hang coats has always been an issue and I do love a pretty dining table. #Recipe – Carrot cake with a pineapple twist

If you want to do some Easter baking this weekend, or over the week, this is your recipe! The yummiest, moist carrot cake with a zangy cream cheese frosting, complete with carrot decorations. These are quite a bit of effort, but I think it is well worth it as they look and taste amazing. There is quite a shopping list, but I ordered all of the bits on Tesco groceries online and a neat trick is I used white chocolate chips with food colouring to complete the decoration with the orange and green which I thought was really effective. Did you know you can make a carrot cake in an Instant Pot?
