#Recipe: Strawberry jam drop biscuits

It was biscuit week on The Great British Bake Off last night, so I got into the spirit of things and made my very first batch of biscuits and I was pleasantly surprised at the outcome. I had been given a fantastic recipe from Tate & Lyle for Raspberry jam drop biscuits and adapted it slightly to make my own version with what I had in the cupboards.

Ingredients
  1. 100g Vegetarian Suet
  2. 3 Eggs
  3. 15g Cornflour or Ground Rice
  4. 75g Brown Sugar
  5. 100g White Breadcrumbs
  6. 50g Raisins
  7. 75g Lemon Marmalade
  8. Grated rind 1 lemon
Instructions
  1. Mix all the dry ingredients together in a large bowl, except for a handful of raisins
  2. Beat the eggs and add to the dry mixture
  3. Grease a pudding basin and put the handful of raisins at the bottom
  4. Pour in the mixture and boil/steam for 1 1/2 hrs, checking the water level from time to time
  5. Turn out and serve with custard!

    They look lovely and it’s nice to have a go at really traditional biscuits sometimes. I don’t think I’ve had ones like this since I was a child so it does bring back nice memories of visiting my gran.
