Christmas style turkey burgers with a summer twist

Ingredients
500gLean turkey mince
1sliceof thick white breador 4 crackers
1egg
1teaspoonof mixed herbs
2teaspoonsof cranberry sauce
4slicesof brie
Instructions
Get the mince in a bowl and break it up with your fingers so that it is moulding together.
Add the mixed herbs to the mince and continue to mix together with your fingers.
Break up the slice of thick bread into crumbs and add it to the mince mixture.
Crack the egg into the bowl and mix this up with the mince mixture, still using your fingers. Make sure to really squish it up so that it mixes up well.
When you have the right texture with the mince, split the mince in half. (Or in quarters, depending on what size burgers you wish to make).
With one half left to the side for later, take the remaining mince and split a bit off for the lid.
Round off the remaining mince, into a burger shape and push a hole in the middle with your knuckles. Making sure to not push through to the bottom.
With the well in the middle of the mince, put a teaspoon of cranberry sauce and a couple of slices of brie. (Whatever will fit).
Then roll out the bit of mince in your hands, flatten and push on top of the well (gently) to make the lid. Tidy it up and make sure no brie/cranberry is showing through the mince.
Using a spatula, place the burgers carefully into an ovenproof dish.
Put the Christmas turkey burgers into the frying pan and shallow fry for around 20/30 minutes, or until cooked right through. Depends on what size burgers you make.
Notes
I served them with rocket drizzled with balsamic vinegar, mushroom and serve it with a fresh panini for a lunch time treat.
