It’s not just any meat free Easter meal… sorry I couldn’t resist. I love a challenge and this Easter M&S challenged us to make a yummy Easter Sunday lunch for the family to enjoy and I think we cracked it. It was perfect after a busy family day and everyone had clean plates. M&S have such lovely meat free options, it was difficult to choose, here is what we made:

Our meat free Easter alternative

Hubby and I have been raised with a traditional family roast on Sunday’s, including Easter and Christmas Days. Now neither of us eat meat we try to find something that is the equivalent of the meat for our roast dinners. This could be a nut roast, pretend meat or a vegetarian pie. We love pie and the parsnip, camembert and chestnut pithivier looked absolutely delicious. M&S have some fabulous vegetarian main course options, you can see some online or you can visit your local M&S Foodhall.

What is a pithivier? I had never heard of this before, so I had to Google it! It is an enclosed pie, usually baked by cooking 2 discs of puff pastry, with a stuffing in-between. In our case we had parsnip, camembert and chestnut. It was absolutely delicious. It took 30 minutes to cook in the fan oven.

Vegetable accompaniments

There is nothing better than crispy roast potatoes. It is still possible to get a good crisp on them without having to use goose fat, obviously we cannot do that as it is not vegetarian. The M&S roasting potatoes are basted in butter, they crisped up perfectly and were absolutely delicious. One pack serves 4, there is plenty of potatoes if you are a family of 4. They took 40 minutes to cook in the fan oven.

We had 2 bags of fresh vegetables, washed and ready to eat. Carrots, cauliflower and broccoli – we steam cooked them and then quickly fried them in garlic and rosemary. They were delicious!

Dessert

We had the most delicious cheesecake, it was called an Easter egg cheesecake and had these cute egg shapes on top. The children loved it, as did the grown ups. I love madagascan vanilla and this cheesecake was a delight, the biscuit base was just perfect too.

To finish off the meal we had a bottle of Prosecco, which was delicious and sweet – one of the nicest tasting bottles we have had. The kiddies had coconut water and fresh mango juice – they loved it.
