#recipe: Toy Story Easter cupcakes

This week’s cupcakes are inspired by some little bits I picked up from the supermarket: fab cupcake cases and the blue/green alien sprinkles for decoration. We love Disney,  so we have made some alien inspired chocolate Easter cupcakes – cherry and chocolate cake with chocolate fudge icing.

  1. 250g unsalted butter, softened
  2. 275g caster sugar
  3. 2 large eggs, lightly whisked
  4. 450g plain flour
  5. 2 tsp baking powder
  6. 3 types of Food colouring, I used red, yellow and green
  1. In a food processor, blend butter and sugar until it is light and fluffy.
  2. Gradually add the lighted whisked eggs and blend until combined.
  3. Sift in the flour and baking powder, blend for a couple of minutes until mixed into a dough.
  4. Wrap the dough in clingfilm and chill for 2 hours.
  5. Preheat the oven to 160 degrees (gas mark 3).
  6. Line a couple of baking sheets with baking paper.
  7. Split dough into three.
  8. Mix the food colouring with the three bits of dough, using your fingers.
  9. Roll out the dough with a rolling pin.
  10. Cut leaf shapes with a knife.
  11. Roll out sausage shapes and spiral together to make the snails back, then add another sausage at the bottom for the snail.
  12. Bake for 30 minutes.
  13. Leave to cool and eat. Yummy!
  1. Use gel colouring as the usual food colouring I used did not take very well, as you can see.
