What with the Royal Wedding last weekend, it totally inspired us to get baking. Isla and I made these cute Royal crown cookies whilst we watched the Royal Wedding footage. I based the cookies on our Monster Inc recipe as they are really tasty and great for decorating. I hope you like them… 

Ingredients 

200g unsalted butter at room temperature

200g caster sugar

1 egg, beaten

1/2 tsp vanilla extract

400g plain flour

Decoration – we used an edible gold glitter spray, coloured edible pearls and coloured writing icing. 

Directions

Set oven to 180 degrees to preheat

Beat butter and sugar with KitchenAid, until pale and fluffy.

Gradually add the beaten egg a little at a time.

Mix in the vanilla extract.

Using a palette knife, mix in the flour. Then use your hands to bring the dough together to form a ball.

Wrap in cling film and chill for at least an hour.

Dust a work surface, then roll out the dough to about 5mm thick.

We cut crown shapes with a knife, we did all different shapes and sizes. 

Bake in the oven for around 10/15 minutes (depending on how thick you have rolled out the dough) at 180 degrees in a fan oven.

Decorate with what ever you have: writing icing, pearls, glitter! Have fun…
