This is a great recipe for a grown up alternative! The kiddies had chocolate spread, banana and also a little strawberry sauce. Mummy’s favourite is lemon and sugar. Daddy loves Bailey’s and I thought this recipe would be right up his street – especially with the added banana’s and walnuts. This is a fantastic recipe for any dessert, a great one to show off if you are hosting too. 

Baileys pancake recipe – makes 9 4″ inch pancakes

Ingredients

1 large egg

2/3 cup milk

1/3 cup plus 1 tablespoon of Baileys

1 cup self raising flour

4 tablespoons butter for cooking pancakes

Caramel, handful of walnuts and banana for serving

Instructions

Add the flour, egg, milk and Baileys to a Nutri Bullet (whisk) and blitz until the batter is smooth.

Heat 1 tablespoon of butter in a frying pan, when the butter is hot add a ladle full of batter to the hot butter.

Wait for approx 1 minute and then flip for another minute. You know when it’s time to flip as the pancake starts to slide around the frying pan easily and you can see bubbles on the pancakes.

Do this until all the batter mix is cooked.

Stack the pancakes on a plate.

Drizzle caramel over the top, sprinkle with walnuts and chopped bananas.
